Heavenly Homemade Sausage Rolls: A Flaky Delight!

Ingredients:

  • 500g puff pastry (store-bought or homemade)
  • 500g high-quality pork sausages
  • 1 small onion, finely diced
  • 2 cloves of garlic, minced

  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a frying pan, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté until softened and translucent.
  3. Remove the casings from the sausages and place the meat in a large mixing bowl. Add the sautéed onion and garlic mixture, dried thyme, dried sage, salt, and pepper. Mix everything together until well combined.
  4. On a lightly floured surface, roll out the puff pastry to a rectangle about 30cm x 40cm (12in x 16in) and approximately 2-3mm (1/8in) thick.
  5. Cut the rolled-out pastry lengthwise into two equal strips. Place a long line of the sausage mixture down the middle of each strip, leaving a small border of pastry on each side.
  6. Brush the edges of the pastry with beaten egg. Fold one side of the pastry over the sausage mixture, then fold the other side over, slightly overlapping the first fold. Press the edges together to seal.
  7. Cut the long sausage rolls into smaller pieces, about 5-7cm (2-3in) in length, and place them seam-side down on the prepared baking sheet. Repeat the process with the remaining pastry and sausage mixture.
  8. Brush the tops of the sausage rolls with beaten egg, which will give them a lovely golden color when baked.
  9. Bake in the preheated oven for approximately 25-30 minutes, or until the sausage rolls are beautifully golden and the pastry is puffed and crispy.
  10. Remove from the oven and let the sausage rolls cool slightly before serving. They can be enjoyed warm or at room temperature, and are perfect on their own or served with tomato sauce or your favorite condiment.
