Ingredients: For the cake:
- 200g dark chocolate (70% cocoa solids), chopped
- 200g unsalted butter, plus extra for greasing
- 200g granulated sugar
- 4 large eggs
- 200g all-purpose flour
- 1/2 teaspoon baking powder
- Pinch of salt
For the fondant centre:
- 100g dark chocolate (70% cocoa solids), chopped
- 100g unsalted butter
- 100g powdered sugar
- 2 large eggs
- 2 large egg yolks
- 50g all-purpose flour
For serving:
- Powdered sugar or cocoa powder (optional)
- Fresh berries or a dollop of whipped cream (optional)
Instructions:
- Preparing the Cake Batter:
- Preheat your oven to 180°C (350°F). Grease a round 8-inch cake pan and line the bottom with parchment paper.
- In a heatproof bowl, place the chopped dark chocolate and butter. Set it over a pot of simmering water, ensuring the bowl doesn’t touch the water. Stir occasionally until melted and smooth.
- In a separate large mixing bowl, whisk together the granulated sugar and eggs until light and fluffy.
- Slowly pour the melted chocolate and butter mixture into the whisked eggs and sugar, stirring continuously until well combined.
- Sift the all-purpose flour, baking powder, and salt into the chocolate mixture. Gently fold the dry ingredients into the batter until no streaks remain.
- Preparing the Fondant Center:
- In a small heatproof bowl, melt the dark chocolate and butter together using the same double boiler method as before. Stir until smooth and set aside to cool slightly.
- In a separate bowl, whisk together the powdered sugar, eggs, and egg yolks until well combined.
- Gradually pour the chocolate and butter mixture into the sugar and egg mixture, whisking continuously.
- Sift the all-purpose flour into the mixture and whisk until the batter is smooth and glossy.
- Assembling and Baking:
- Pour half of the cake batter into the prepared cake pan, spreading it evenly.
- Gently spoon the fondant mixture onto the centre of the cake batter, ensuring it doesn’t touch the sides of the pan.
- Carefully pour the remaining cake batter over the fondant mixture, covering it entirely.
- Bake in the preheated oven for approximately 25-30 minutes or until the cake has risen and the edges are set, but the centre is still slightly wobbly.
- Remove from the oven and allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serving:
- Once cooled, carefully remove the cake from the pan and place it on a serving plate.
- Dust the top of the cake with powdered sugar or cocoa powder for an elegant finish.
- Add a touch of flair by garnishing with fresh berries or a dollop of whipped cream.
- Slice into individual servings, and watch as the molten chocolate centre oozes out seductively.
